For Pizza Dough

  • 300 gm All Purpose Flour
  • 1 tsp Instant Yeast
  • 1 tsp Salt
  • 200 ml Warm Water
  • 1 tbsp Olive Oil

For San Marzano Sauce

  • 4 unit Tomatoes
  • 1 tsp Salt
  • Handful Fresh Basil

For Pizza Toppings

  • Pizza Sauce
  • 125 gm Mozarella Ball
  • 2 tbsp Pecorino Cheese
  • Few Fresh Basil Leaves

Pizza Dough

  1. In a kneading bowl mix in flour, yeast and salt.

  2. Need into a soft dough by pouring in water and olive oil.

  3. Cover with a damp towel and let it rise.

San Marzano Sauce

  1. Make a puree of tomatoes.

  2. In a mixing bowl, mix in tomato puree, salt and fresh basil.

Pizza Base

  1. Preheat the woodfire oven at 450 degree celsius

  2. Split the rised dough in two halves.

  3. Stretch the ball of dough without a rolling pin into a thin crust and prepare two pizza base.

Assembling the Pizza

  1. Spread San Marzano Pizza Sauce on the pizza base

  2. Scatter mozarella cheese and sprinkle parmesan cheese over the sauce.

  3. Drizzle olive oil and and put basil leaves.

  4. Keep the pizza on shovel and place it in the woodfire oven.

  5. Cook the pizza for 2 to 3 minutes only. Turning it after every one minute and check the bottom not letting it burn.

Step by Step Instructions – how to make Margherita Pizza

Pizza Dough

Step 1

In a kneading bowl, mix around 2500gm of all-purpose flour, 1 teaspoon instant yeast, and 1 teaspoon salt.

Step 2

Make a well of flour, pour in 200 ml water in small proportions, 1 tablespoon of olive oil, and knead together into a sticky dough.

Step 3

Sprinkle some all-purpose flour from the remaining 50gm on the kitchen platform or any flat surface and knead dough over it

Step 4

First, stretch the dough, and then fold it. Keep adding the remaining flour while kneading.

Step 5

Make a round dough, tuck the outer side of the dough in, and do this two to three times. Knead the dough for 15 to 20 minutes to get a soft and stretchy dough.

Step 6

Note – Total fermentation is of 24 hours, the dough rests for 18 hours, and pizza balls are kept for another 4 to 6 hours.

Fermentation time can be reduced, rest the dough to ferment for at least an hour. Make two dough balls, sprinkle all-purpose flour in a container, place the dough balls over it and let them rise for half an hour

San Marzano Sauce

What is San Marz
Basically, San Marzano Tomato Sauce is made with a kind of tomato that grows in the Vesuvius area. Oregano or garlic is not added to the sauce used in an authentic sauce.

Step 7

For Margherita Pizza sauce: Margherita Pizza sauce: Dice 4 tomatoes and grind them to a smooth tomato puree. In a mixing bowl pour prepared tomato puree or use canned tomato puree, 1 teaspoon salt, and basil leaves.

Store-bought canned San Marzano Tomato Sauce can be used in Margherita Pizza.

*How to take out the dough balls from the box in the right way?

Sprinkle a bit of flour over the top of the dough balls, and put flour even on the spatula. Tuck the spatula underneath the dough balls little by little at first, then tuck in one shot and place it upside down on a plate of all-purpose flour.

Step 9

Stretch the dough without any rolling pin, solely with hands. Starting with the bottom edge press with delicate hands all the way up leaving 1 centimeter of edge. Turn the pizza upside down and do the same. Do this a couple of times.

Preheat the woodfire oven to 842 degrees Fahrenheit (450 degrees Celsius) the perfect temperature for a crispy crust and airy inside.

Place a few basil leaves on the pizza and drizzle a generous amount of olive oil for flavor, basil can be placed even after baking the pizza.

Step 14

After assembling the toppings, put the Margherita pizza on the shovel, and stretch the pizza to fit the shovel. Put the shovel in a preheated woodfire oven. Lift the pizza from the bottom to make sure the bottom isn’t burnt.

Step 15

Take out the pizza, twist and turn it, and again put it in the wood fire oven.

Step 16

Margherita Pizza in a woodfire oven that is preheated to 450 degrees Celsius will take only 90 seconds to cook or bake till the edges turn crispy and the bottom is not burnt.
